Valentine Cookies

I just made these yummy cookies from Sandra's recipe over at Thistle Cove Farm. They are easy and good!
 They're put together like an Oreo cookie, but they're strawberry.
Doesn't this look good?
 I'll post the recipe below. I did put this platter in the freezer for about 20 minutes, to help the filling set up and be firmer. These will go to our church's pot luck dinner this evening.
Strawberry Valentine Cookies:
1 box strawberry cake mix
1/2 - 3/4 cup vegetable oil
2 eggs
Mix these 3 ingredients in your mixer until it forms a dough stiff enough to roll into small 1/2" balls. Place these on an ungreased cookie sheet and bake them for 8-10 minutes at 350º. They should crack on the top and get puffy. Do not let them brown. Remove and cool completely on racks.

8 oz. container strawberry cream cheese
1/2 cup softened butter
1 tsp. vanilla
about 4 cups of sugar
Mix these ingredients in your mixer with a whisk attachment until creamy and stiff enough to spread. Spread between 2 cookies and gently press together.

That's it! A fun cookie for a fun holiday.

MK, I decreased the oil because I thought it made the dough a little too moist. They were good cookies, everyone I've given the to have really liked them.

Sandra, I also decreased the oil somewhat b/c I felt it looked too greasy. 1/2 cup would probably do it.
