Adam's Chicken Salad

Adam made chicken salad for the first time, the other day. He's just not a chicken salad kind of guy. I don't know what prompted him to make this batch, unless it was old-guyness or senility. Anyway, it turned out very good.
It was a pretty standard recipe, I suppose, with chicken chunks, mayo, chopped celery, onion, pineapple and toasted almonds. But he added one more ingredient that made the flavors pop out, and made this a stand out dish ....
He added cilantro. If you love cilantro, you might want to try it in chicken salad once. It's a very good idea!

I just love chicken salad, but have never had it with cilantro. Sounds interesting.
